G.O. (Gourmet Organic) Kosher opened last fall in Mount Kisco at 41 S. Moger Ave., formerly the site of Connie's Bakery. The restaurant goes to great lengths to ensure all of its food is kosher. The restaurant is under the supervision of Vaad Harabonim of Queens, Rabbi Chaim Schwartz.

Chef Paul Sia, who worked at Epstein's in the Bronx and Jewish delis in Mount Kisco and Ardsley said he started G.O. Kosher because he felt he was filling a void in Northern Westchester.

"I've been doing this my whole life," said Sia, who lives in Bethel. "I feel like I'm coming home. I've run into a lot of my old clientele."

Every morning, a rabbi opens up the restaurant and turns on the fire and opens up the refrigerators while also checking the meat, eggs and greens to ensure everything is clean and compliant.

Sia said they have been catering numerous events for local synagogues and Jewish community centers.

"We're really starting to hit our stride," Sia said. "Nobody is doing anything like this in the area."

The restaurant is also accommodating to people who value organic and gluten free food as well as people who value good Jewish delicacies.

"If you're a New Yorker, you know what a good pastrami sandwich and a bowl of matzoh ball soup tastes like," Sia said.

Sia said Jewish delis have become a dying breed as people explore more healthier options. But he said his Russian grandmother lived to 103 eating chopped liver and chicken fat.

"It's important to eat natural foods," Sia said. "You should never eat processed food. There's no such thing as good fast food."

Patrons are allowed to try any good before they eat it. Sia recommends his sandwich called The Slob: corned beef or pastrami stuffed in a knish with mustard and sauerkraut.

Sia said he has enjoyed being back in Mount Kisco.

"It's a very nice community that's very supportive of small businesses," Sia said.
