Westchester Food Scene Just Got 'Cooler' With New French Canadian Gastropub

From the top of the Adirondacks to the mouth of the Hudson comes The Birch Collective, a new gastropub in White Plains.

The grand opening weekend celebrations are going on now through Monday, Sept 4 (though they officially opened Friday, Aug. 25) with dinner served until 11 p.m. and the bar going till 4 a.m.

The official ribbon cutting is 4 p.m. Thursday, Aug. 31.

The eatery is all about mixing American cuisine with a French Canadian flair. The name, in fact, comes from the birch, Quebec’s official tree, which symbolizes the opportunity for new beginnings. 

"It is our intent that every guest who experiences The Birch Collective will leave with a lasting memory emblazoned by unparalleled food, drink, and a sense of community," reads the website.

Customers should expect over-the-top cocktails, craft beer, and inventive comfort food showcasing American classics with a Canadian touch. Among the options: "Green Eggs and Ham" (spinach stuffing, crème fraîche, pancetta chips), "Canadian Chow-Duh" (cheddar, Canadian bacon, root vegetables IPA beer), "Brined & Swined" (pork chop, cannellini beans, Birch bbq sauce), "Mac'N On Mamaroneck" (rigatoni, three-cheese sauce, brioche breadcrumb, truffle oil) and more.

There's also a custom-made Foosball table.
